Pecan Toffee Squares Recipe
Ingredients:
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 1/4 teaspoon salt
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 1 cup pecans, roughly chopped
- 1 cup semi-sweet chocolate chips (optional, for a chocolate topping)
- Flaky sea salt (optional, for garnish)
Instructions:
- Prepare the Baking Dish:
- Line a 9×13-inch baking pan or a sheet pan with parchment paper. Grease lightly with butter.
- Toast the Pecans (Optional):
- Spread the pecans on a baking sheet and toast in a preheated oven at 350°F (175°C) for 5-7 minutes. This enhances their flavor. Set aside to cool.
- Cook the Toffee:
- In a heavy-bottomed saucepan, melt the butter over medium heat.
- Add granulated sugar, brown sugar, salt, and water. Stir continuously.
- Bring the mixture to a boil and cook until it reaches 300°F (149°C) on a candy thermometer (hard crack stage). This will take about 10-15 minutes.
- Remove from heat and stir in the vanilla extract.
- Assemble the Toffee:
- Immediately pour the hot toffee mixture onto the prepared pan. Spread it evenly using a spatula.
- Sprinkle the toasted pecans over the toffee while it’s still hot, pressing them gently to adhere.
- Optional Chocolate Topping:
- If you prefer a chocolate layer, sprinkle the chocolate chips over the hot toffee. Let them sit for 1-2 minutes to melt, then spread evenly with a spatula.
- Cool and Set:
- Let the toffee cool completely at room temperature, or place it in the refrigerator for faster cooling.
- Break into Squares:
- Once the toffee is firm, break it into squares or pieces using your hands or a sharp knife.
- Optional Garnish:
- Sprinkle flaky sea salt on top for a sweet and salty contrast.
