Phyllo Pastry with Cheese and Egg Mixture
Ingredients:
- 1 pack phyllo dough (store-bought or homemade)
- 2 cups feta cheese (or any crumbly cheese)
- 2-3 eggs
- 1 ½ cups milk or cream
- Fresh parsley or spinach (chopped, optional)
- ½ cup butter (melted) or olive oil
- Salt and pepper to taste
Instructions:
- Prepare the Filling:
- In a bowl, mix crumbled feta cheese, chopped parsley or spinach, and one egg. Add salt and pepper to taste.
- Layer the Phyllo Dough:
- Preheat your oven to 180°C (350°F).
- Line a baking tray with parchment paper.
- Fold each sheet of phyllo dough accordion-style or scrunch it into folds. Place these in rows on the tray.
- Add the Filling:
- Distribute the cheese mixture into the folds of the phyllo dough.
- Make the Custard:
- Whisk together the milk (or cream) and remaining eggs. Add a pinch of salt.
- Pour the custard evenly over the phyllo dough.
- Bake:
- Bake in the preheated oven for about 30-40 minutes or until the phyllo dough is golden and crispy.
- Serve:
- Let it cool slightly, slice into squares, and serve warm.
