Pineapple Chutney Recipe

 

Ingredients:

  • 1 large pineapple, peeled, cored, and diced
  • 1 cup sugar
  • 1 cup apple cider vinegar
  • 1 large onion, finely chopped
  • 1/2 cup golden raisins
  • 1/4 cup finely chopped ginger
  • 1/4 cup finely chopped garlic
  • 1 tablespoon mustard seeds
  • 1 tablespoon chili flakes
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions:

  1. In a large pot, combine the diced pineapple, sugar, and apple cider vinegar. Stir well.
  2. Add the chopped onion, golden raisins, ginger, garlic, mustard seeds, chili flakes, turmeric, cloves, cinnamon, and salt.
  3. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low and simmer for about 45 minutes to 1 hour, stirring occasionally.
  4. Cook until the mixture has thickened and the flavors have melded together.
  5. Remove from heat and let it cool slightly.
  6. Transfer the chutney to sterilized jars, seal, and let it cool completely before refrigerating.
  7. The chutney can be stored in the refrigerator for up to a month.
