Pineapple Chutney Recipe
Ingredients:
- 1 large pineapple, peeled, cored, and diced
- 1 cup sugar
- 1 cup apple cider vinegar
- 1 large onion, finely chopped
- 1/2 cup golden raisins
- 1/4 cup finely chopped ginger
- 1/4 cup finely chopped garlic
- 1 tablespoon mustard seeds
- 1 tablespoon chili flakes
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions:
- In a large pot, combine the diced pineapple, sugar, and apple cider vinegar. Stir well.
- Add the chopped onion, golden raisins, ginger, garlic, mustard seeds, chili flakes, turmeric, cloves, cinnamon, and salt.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low and simmer for about 45 minutes to 1 hour, stirring occasionally.
- Cook until the mixture has thickened and the flavors have melded together.
- Remove from heat and let it cool slightly.
- Transfer the chutney to sterilized jars, seal, and let it cool completely before refrigerating.
- The chutney can be stored in the refrigerator for up to a month.
