Pineapple Quick Bread
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted and cooled
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple (with juice)
- 1/2 cup sour cream
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Prepare the Oven and Pan:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Mix the Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.
- Mix the Wet Ingredients:
- In a medium bowl, beat the eggs. Add the melted butter, vanilla extract, crushed pineapple (with juice), and sour cream. Mix until smooth.
- Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix.
- If using, fold in the chopped walnuts or pecans.
- Bake the Bread:
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
- Cool the Bread:
- Remove the bread from the oven and let it cool in the pan for about 10 minutes.
- Transfer the bread to a wire rack to cool completely.
- Serve:
- Once the bread is completely cool, slice and serve. Enjoy the moist, flavorful pineapple quick bread with a cup of tea or coffee.
