Pineapple Teriyaki Glazed Salmon

 

Ingredients:

  • 2 salmon fillets
  • 1 cup fresh pineapple chunks
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice (or orange juice)
  • 3 tablespoons brown sugar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 tablespoons chopped fresh cilantro or parsley
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Prepare the Teriyaki Sauce: In a small saucepan, combine soy sauce, pineapple juice, brown sugar, honey, minced garlic, and grated ginger. Bring to a simmer over medium heat, stirring occasionally.
  2. Thicken the Sauce: In a small bowl, mix the cornstarch and water to make a slurry. Slowly add the slurry to the saucepan, stirring constantly, until the sauce thickens. Remove from heat and set aside.
  3. Season the Salmon: Season the salmon fillets with salt and pepper.
  4. Cook the Salmon: Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin-side down, and cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
  5. Glaze the Salmon: In the last minute of cooking, brush the salmon fillets with the teriyaki sauce.
  6. Prepare the Pineapple Topping: In a separate small pan, briefly sauté the pineapple chunks until they are warmed through and slightly caramelized.
  7. Serve: Place the glazed salmon fillets on a serving plate. Top with the sautéed pineapple chunks and sprinkle with chopped cilantro or parsley.
  8. Enjoy: Serve immediately with additional teriyaki sauce on the side if desired.
