Pork Rib and Corn Soup Recipe
Ingredients:
- Pork ribs: 500g
- Corn: 2 cobs (cut into thick slices)
- Carrots: 2 (peeled and chopped)
- Tomatoes: 2 (cut into wedges)
- Onion: 1 small (optional, for extra flavor)
- Garlic: 2 cloves (optional, minced)
- Spring onions or cilantro: Chopped, for garnish
- Salt: To taste
- Pepper: To taste
- Water: 1.5 liters
- Oil: 1 tablespoon
Instructions:
- Prepare the Pork Ribs:
- Wash the ribs thoroughly.
- Blanch the ribs in boiling water for 2–3 minutes to remove impurities. Rinse with cold water and set aside.
- Sauté (Optional):
- Heat oil in a large pot. Add garlic and onion, sauté until fragrant.
- Cook the Soup Base:
- Add the pork ribs to the pot and sauté briefly.
- Pour in 1.5 liters of water and bring it to a boil. Skim off any foam.
- Add Vegetables:
- Once the broth is clear, add corn, carrots, and tomatoes. Reduce to a simmer and cook for 40–60 minutes, or until the pork ribs are tender.
- Season:
- Add salt and pepper to taste.
- Serve:
- Garnish with chopped spring onions or cilantro. Serve hot with steamed rice or enjoy on its own.
