Recipe for Meatloaf with Onion Gravy and Cheese

 

Ingredients:

For the Meatloaf:

  • 1 lb (450g) ground beef
  • 1 lb (450g) ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup (optional)

For the Onion Gravy:

  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

For the Topping:

  • 1 1/2 cups shredded cheese (cheddar or mozzarella)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Meatloaf:
    • Preheat your oven to 350°F (175°C).
    • In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, milk, chopped onion, minced garlic, egg, Worcestershire sauce, thyme, salt, and pepper.
    • Mix everything together until well combined, but do not overmix to keep the meatloaf tender.
    • Shape the mixture into a loaf and place it in a greased baking dish.
    • If desired, spread ketchup on top of the meatloaf for added flavor.
    • Bake the meatloaf for about 1 hour, or until it reaches an internal temperature of 160°F (70°C).
  2. Prepare the Onion Gravy:
    • While the meatloaf is baking, heat the butter and olive oil in a large skillet over medium heat.
    • Add the sliced onions and cook, stirring occasionally, until they are soft and golden brown, about 15-20 minutes.
    • Sprinkle the flour over the onions and cook for another minute, stirring constantly.
    • Gradually add the beef broth, stirring to combine and thicken the sauce.
    • Stir in the Worcestershire sauce and season with salt and pepper to taste.
    • Simmer the gravy for a few minutes until it reaches your desired consistency.
  3. Assemble the Dish:
    • Once the meatloaf is done, remove it from the oven and sprinkle the shredded cheese over the top.
    • Return the meatloaf to the oven for 5-10 minutes, or until the cheese is melted and bubbly.
    • Remove the meatloaf from the oven and spoon the onion gravy over the top.
    • Garnish with chopped parsley.
  4. Serve:
    • Slice the meatloaf and serve with additional onion gravy on the side. Pair it with mashed potatoes or a vegetable side dish for a complete meal.
