Recipe for Stuffed Pancakes (Parathas)

 

 

 

Ingredients:

  • For the Dough:
    • 2 cups all-purpose flour
    • 1/2 teaspoon salt
    • Water, as needed to form a smooth dough
    • 2 tablespoons oil
  • For the Filling:
    • 1 cup mashed potatoes
    • 1/2 cup grated cheese (optional)
    • 2 tablespoons finely chopped onions
    • 1 teaspoon chopped green chilies (optional)
    • Salt and pepper to taste
    • Fresh herbs like cilantro or parsley, chopped
  • For Cooking:
    • Additional oil or butter for frying

Instructions:

  1. Prepare the Dough:
    • In a large bowl, mix the flour and salt. Gradually add water and mix until the dough comes together.
    • Knead the dough for about 5-7 minutes until it is smooth and elastic. Drizzle with oil, cover, and let it rest for at least 30 minutes.
  2. Make the Filling:
    • Combine all the filling ingredients in a bowl and mix well. Adjust seasoning to taste.
  3. Assemble the Pancakes:
    • Divide the dough into equal-sized balls.
    • Roll out each ball into a circle about 5-6 inches in diameter.
    • Place a portion of the filling in the center of each rolled-out dough.
    • Bring the edges together and seal, then gently flatten and roll out again to about the same size, taking care not to let the filling escape.
  4. Cook the Pancakes:
    • Heat a skillet or griddle over medium heat and lightly oil it.
    • Place the stuffed pancake on the skillet and cook until golden brown, about 2-3 minutes on each side. Press gently with a spatula to ensure even cooking.
    • Repeat with the remaining dough and filling.
  5. Serve:
    • Serve the pancakes hot, ideally with a side of yogurt, pickle, or fresh salad.

These pancakes are perfect for a filling breakfast or a hearty snack, offering a delightful blend of flavors encased in a crispy, golden exterior.
