Method

  1. Prepare the Pie Crust:

    • Divide the dough into two halves. Flatten each into a disk, wrap in plastic, and refrigerate for at least 1 hour.
  2. Make the Filling:
    • Heat olive oil in a skillet over medium heat. Add onions and garlic, cooking until softened.
    • Add ground meat, breaking it up with a spoon until browned and cooked through.
    • Stir in peas, carrots, broth, tomato paste, and Worcestershire sauce. Simmer until the liquid reduces slightly and the mixture is hearty. Season with salt and pepper. Let cool.
  3. Assemble and Bake:
    • Preheat the oven to 375°F (190°C).
    • Roll out one disk of dough to fit the pie dish. Place the crust in the dish, and trim the edge.
    • Spoon the filling into the crust. Roll out the second disk of dough and lay it over the filling. Trim, seal, and crimp the edges. Cut slits in the top to vent steam.
    • Brush the top crust with beaten egg to give the pie a golden finish.
    • Bake for 35 to 45 minutes, or until the crust is golden brown and the filling is bubbly.
