Ingredients:

For the Cake:

  • 2 1/2 cups (300g) all-purpose flour
  • 1 1/2 cups (300g) granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups (360ml) vegetable oil
  • 1 cup (240ml) buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar

For the Cream Cheese Glaze:

  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (60g) unsalted butter, softened
  • 1 cup (125g) powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2-3 tablespoons milk (adjust for desired consistency)

For the Cinnamon Sugar Topping (optional):

  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions:

Make the Cake:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9×13-inch pan.
  2. Combine Dry Ingredients:
    • In a medium bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. Mix Wet Ingredients:
    • In a large bowl, gently beat together the oil, buttermilk, eggs, food coloring, vanilla, and vinegar.
  4. Combine Wet and Dry Ingredients:

  1. Beat the Cream Cheese and Butter:
    • In a medium bowl, beat the cream cheese and butter together until smooth and creamy.
  2. Add the Sugar and Vanilla:
    • Gradually add the powdered sugar, mixing well after each addition. Stir in the vanilla extract.
  3. Adjust Consistency:
    • Add milk, one tablespoon at a time, until the glaze reaches your desired consistency.

Assemble and Decorate:

  1. Glaze the Cake:
    • Once the cake is completely cool, drizzle the cream cheese glaze over the top, allowing it to drip down the sides.
  2. Add Cinnamon Sugar Topping:
    • If using, mix together the granulated sugar and ground cinnamon. Sprinkle over the glaze for added flavor and texture.
