Rustic Apple Slab Pie

 

Ingredients:

For the Crust:
  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed 🧈
  • 1/2 teaspoon salt 🧂
  • 1 tablespoon sugar
  • 1/4 cup ice water (more if needed)
For the Apple Filling:
  • 4 large apples (Granny Smith or Honeycrisp), peeled and sliced 🍏
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice 🍋
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, cut into small pieces
For the Topping:
  • 1 egg, beaten (for egg wash) 🥚
  • 1 tablespoon coarse sugar (optional)

Instructions:

  1. Prepare the crust: In a bowl, mix flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until dough forms. Shape into a disk, wrap in plastic, and chill for 30 minutes.
  2. Preheat oven to 375°F (190°C). Grease a baking sheet.
  3. Make the filling: In a large bowl, toss apples with brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla. Let sit for 10 minutes.
  4. Roll out the dough: On a floured surface, roll dough into a rectangle slightly larger than the baking sheet. Transfer to the sheet, letting excess hang over the edges.
  5. Assemble: Spread the apple filling evenly over the crust. Dot with butter. Fold over the edges of the dough, creating a rustic border.
  6. Brush & Bake: Brush crust with egg wash and sprinkle with coarse sugar. Bake for 35-40 minutes or until golden brown and bubbly.
  7. Cool & Serve: Let cool slightly before slicing. Serve warm with vanilla ice cream! 🍨

💡 Tip: Add a drizzle of caramel sauce for extra indulgence!
