Ingredients:

For the ganache filling:

  • 200 grams dark chocolate, finely chopped
  • 200 ml heavy cream
  • 1 tablespoon unsalted butter

For the cookie dough:

  • 1 cup all-purpose flour (heat-treated to kill bacteria)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips

For the chocolate coating:

  • 200 grams of dark chocolate, chopped
  • 1 tablespoon coconut oil

For garnishing:

  • Mini chocolate chips
  • Edible sprinkles
  • Coarse sea salt

Instructions:

Making the ganache:

  1. Heat the heavy cream in a saucepan until it just begins to simmer. Do not boil.
  2. Pour the hot cream over the chopped chocolate and butter in a bowl. Let sit for 1 minute, then stir until smooth and glossy.
  3. Refrigerate until the ganache is set, about 1-2 hours.

Preparing the cookie dough:

  1. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  2. Mix in milk and vanilla extract. Gradually blend in the flour and salt until well combined.
  3. Stir in the mini chocolate chips.
  4. Roll the dough into small balls and flatten each into a disc. Place a teaspoon of ganache in the center of each disc, then wrap the dough around it, sealing the chocolate inside. Return to the fridge for 30 minutes.

Preparing the chocolate coating:

  1. Melt the dark chocolate and coconut oil together in a microwave-safe bowl, stirring every 30 seconds until smooth.

Assembling the truffles:

  1. Using a fork, dip each chilled dough ball into the melted chocolate, ensuring it is completely coated.
  2. Return the chocolate-coated balls to the parchment paper. Immediately sprinkle with mini chocolate chips, edible sprinkles, and a pinch of coarse sea salt before the chocolate sets.
  3. Chill the truffles in the refrigerator until the chocolate is firm, about 15-20 minutes.

Serving:

  1. Keep the truffles chilled until ready to serve. The rich ganache center, combined with the crisp chocolate shell and the sweet and salty toppings, makes for an irresistible treat.
