Slow Cooker Pork Chops with Potatoes and Butter
Ingredients:
- 6 pork chops (bone-in or boneless)
- 4–6 medium potatoes, sliced into thick rounds
- 4 tablespoons butter, cut into small cubes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup chicken broth or water
Instructions:
- Prepare the potatoes:
- Slice the potatoes into thick rounds (about 1/2 inch thick) and layer them at the bottom of the slow cooker. Season lightly with salt, pepper, and half of the garlic powder.
- Season the pork chops:
- In a small bowl, combine garlic powder, onion powder, thyme, parsley, paprika, salt, and pepper.
- Rub the seasoning mix evenly over both sides of the pork chops.
- Assemble the dish:
- Place the seasoned pork chops on top of the potatoes in the slow cooker.
- Add small cubes of butter over the pork chops (as seen in the image).
- Drizzle the olive oil evenly over the meat and potatoes.
- Pour the chicken broth (or water) into the slow cooker to keep everything moist.
- Cook:
- Cover the slow cooker and cook on low for 6–7 hours or high for 3–4 hours.
- The pork chops should be tender, and the potatoes soft and well-seasoned.
- Serve:
- Serve the pork chops and potatoes warm with a drizzle of the buttery juices from the slow cooker.
Tips:
- Optional add-ins: Add sliced onions or carrots for extra flavor and variety.
- Gravy option: If you’d like a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the juices in the last 30 minutes of cooking.
- Serve with a side of steamed green beans or a fresh salad for a complete meal.
