Snowball Cookies Recipe
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus more for coating
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup finely chopped nuts (such as walnuts, pecans, or almonds)
Equipment:
- Mixing bowls
- Baking sheet
- Parchment paper (optional)
- Wire rack for cooling
Instructions:
- Preheat Oven and Prepare Baking Sheet:
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Line a baking sheet with parchment paper or leave ungreased.
- Mix Butter and Sugar:
- In a large bowl, cream together the softened butter and 1/2 cup of powdered sugar until smooth and fluffy. Stir in the vanilla extract.
- Combine Dry Ingredients:
- In another bowl, whisk together the flour and salt. Gradually blend this into the butter mixture. Stir in the chopped nuts until evenly distributed.
- Shape Cookies:
- Roll the dough into 1-inch balls and place them about 1 inch apart on the prepared baking sheet.
- Bake:
- Bake in the preheated oven for about 14 to 18 minutes, or until very lightly browned.
- Coat in Sugar:
- Remove from oven and while still warm, roll cookies in additional powdered sugar. Cool on a wire rack and once cooled, roll them in powdered sugar again for a second coat.
