Spiced Mango Chutney

 

Ingredients:

  • 4 large ripe mangoes, peeled and thinly sliced
  • 1 cup sugar
  • 1 cup distilled white vinegar
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 large red chili, finely chopped (optional for heat)

Instructions:

  1. Prepare the Mangoes:
    • Peel the mangoes and slice them thinly.
  2. Combine Ingredients:
    • In a large pot, combine the sliced mangoes, sugar, and vinegar. Stir to mix well so the sugar begins to dissolve.
  3. Add Spices and Simmer:
    • Add the minced garlic, grated ginger, ground cinnamon, ground cloves, and salt to the pot.
    • If using, add the chopped red chili for some heat.
    • Bring the mixture to a boil, then reduce the heat to low and let it simmer. Stir occasionally to prevent sticking.
  4. Cook the Chutney:
    • Continue to simmer the mixture for about 30-45 minutes, or until it has thickened and the mangoes are soft and translucent.
  5. Cool and Store:
    • Remove the chutney from the heat and allow it to cool.
    • Once cooled, transfer to sterilized jars. Seal and refrigerate.

Serving Suggestions:

  • As a Condiment: Serve with curry, grilled meats, or sandwiches for added flavor.
  • With Cheese: Pair with a cheese platter as a sweet and spicy accompaniment.
