Spiced Mango Chutney
Ingredients:
- 4 large ripe mangoes, peeled and thinly sliced
- 1 cup sugar
- 1 cup distilled white vinegar
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 large red chili, finely chopped (optional for heat)
Instructions:
- Prepare the Mangoes:
- Peel the mangoes and slice them thinly.
- Combine Ingredients:
- In a large pot, combine the sliced mangoes, sugar, and vinegar. Stir to mix well so the sugar begins to dissolve.
- Add Spices and Simmer:
- Add the minced garlic, grated ginger, ground cinnamon, ground cloves, and salt to the pot.
- If using, add the chopped red chili for some heat.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer. Stir occasionally to prevent sticking.
- Cook the Chutney:
- Continue to simmer the mixture for about 30-45 minutes, or until it has thickened and the mangoes are soft and translucent.
- Cool and Store:
- Remove the chutney from the heat and allow it to cool.
- Once cooled, transfer to sterilized jars. Seal and refrigerate.
