Spiced Mini Loaves with Cream Cheese Frosting
Ingredients:
For the Mini Loaves:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
For the Frosting:
- 1/2 cup cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract

- 1/2 cup crushed walnuts or any preferred nut
Instructions:
- Preheat Oven & Prepare Pans:
- Preheat the oven to 350°F (175°C).
- Grease and flour mini loaf pans.
- Mix Dry Ingredients:
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Cream Butter and Sugar:
- In another bowl, beat the brown sugar and butter until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Stir in the vanilla extract.
- Combine Mixtures:
- Alternately add the dry ingredients and buttermilk to the creamed mixture, starting and ending with dry ingredients.
- Bake:
- Pour the batter into prepared mini loaf pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare Frosting:
- Beat together cream cheese and butter until smooth.
- Gradually add powdered sugar and vanilla, continue beating until creamy.
- Frost & Top the Loaves:
- Once the mini loaves are cool, spread the cream cheese frosting on top of each.
- Sprinkle with crushed nuts.
