Spinach Stuffed Meatloaf Recipe

 

 

 

Ingredients:

  • For the Meatloaf:
    • 2 pounds ground beef (or a mix of beef and pork)
    • 1 cup breadcrumbs
    • 1 egg, beaten
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 tablespoons Worcestershire sauce
    • 1/2 cup milk
  • For the Spinach Filling:
    • 2 cups fresh spinach, chopped
    • 1 cup ricotta cheese
    • 1/2 cup grated Parmesan cheese
    • 1 egg
    • Salt and pepper, to taste
    • Nutmeg, a pinch (optional)

Instructions:

1. Preheat Oven:

  • Preheat your oven to 375°F (190°C).

2. Prepare Meatloaf Mixture:

  • In a large bowl, combine the ground meat, breadcrumbs, beaten egg, chopped onion, minced garlic, salt, pepper, Worcestershire sauce, and milk. Mix until well combined.

  • In another bowl, mix the chopped spinach, ricotta, Parmesan, egg, and season with salt, pepper, and a pinch of nutmeg if using.

4. Assemble the Meatloaf:

  • On a parchment-lined baking sheet or a large piece of aluminum foil, pat the meat mixture into a rectangle about 1/2-inch thick.
  • Spread the spinach filling evenly over the meat, leaving a small border around the edges to prevent spillage.
  • Starting from one of the shorter sides, carefully roll up the meatloaf to enclose the filling, using the parchment or foil to help lift and roll tightly.

5. Bake:

  • Seal the edges of the meatloaf and smooth out any cracks.
  • Place the roll seam-side down on the baking sheet. Bake in the preheated oven for about 1 hour or until the meat is cooked through and the internal temperature reaches 160°F (71°C).

6. Serve:

  • Let the meatloaf rest for 10 minutes before slicing. Serve warm.
