SPONGE CAKE
🌟 PREPARATION:
1. Preheat the oven to 175°C. Grease the bottom of the baking tray and cover it with baking paper.
2. Beat the eggs in a large mixing bowl and add the sugar.
3. Using an electric mixer, beat the eggs and sugar on medium speed for 8-10 minutes until the mixture is thick, white and triples in size.
4. Sift the flour into the egg mixture in small pieces. Gently fold in the dough, being careful not to overfill it. Make sure to fold the dough well, but make sure there is air left in the dough.
5. Once the flour is completely incorporated, pour the oil into the prepared pan.
6. Bake in the preheated oven for 25-30 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
7. Remove the cake from the oven and let it cool in the mold for 5 minutes. Then place on a rack to cool completely.
8. After it has cooled, you can serve the sponge cake as it is or spread it with whipped cream, fresh fruit or your favorite cream.
