Steamed Semolina and Poppy Seed Cake
Ingredients:
- 1 cup semolina (sooji)
- 1/2 cup sugar
- 1/4 cup poppy seeds
- 1/2 cup yogurt
- 1/2 cup milk
- 1/4 cup melted butter or ghee
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
- Prepare the Batter:
- In a large mixing bowl, combine the semolina, sugar, and poppy seeds.
- Add the yogurt, milk, melted butter, and vanilla extract to the dry ingredients. Mix well until all ingredients are combined and the batter is smooth.
- Let the batter rest for 15-20 minutes to allow the semolina to absorb the liquids.
- Prepare the Steamer:
- While the batter is resting, prepare a steamer. You can use a traditional steamer or a large pot with a steamer insert. Fill the bottom with water and bring it to a gentle simmer.
- Add Leavening Agents:
- After the resting period, add the baking powder, baking soda, and a pinch of salt to the batter. Mix gently until well incorporated.
- Prepare the Mold:
- Grease a bundt pan or any cake mold with butter or oil. You can also line it with parchment paper for easier removal.
- Pour and Steam:
- Pour the batter into the prepared mold, spreading it evenly.
- Place the mold in the steamer, cover, and steam for 30-40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Ensure the water in the steamer does not touch the batter.
- Cool and Serve:
- Once cooked, remove the mold from the steamer and let the cake cool in the mold for 10-15 minutes.
- Carefully invert the cake onto a serving plate.
- Slice and serve the cake warm or at room temperature.
