Stir-Fried Chicken with Bell Peppers and Green Beans

 

Ingredients:

  • 500 g (1 lb) chicken (thighs or breasts), cut into pieces
  • 1 red bell pepper, sliced into strips
  • 200 g (7 oz) green beans
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 2 garlic cloves, minced
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch (cornflour) mixed with a little water
  • 1 tablespoon sesame oil or vegetable oil
  • Salt and pepper to taste
  • Red chili flakes (optional, to taste)

Instructions:

  1. Prepare the Chicken: Heat oil in a pan over medium heat. Add the chicken pieces and sauté until they are fully cooked and golden brown. Remove from the pan and set aside.
  2. Cook the Vegetables: In the same pan, add the green beans and bell peppers. Stir-fry for 3 to 4 minutes until they are slightly tender but still crisp.
  3. Add the Aromatics: Add the minced garlic to the pan and stir for about 1 minute until fragrant.
  4. Make the Sauce: In a small bowl, mix together the soy sauce, oyster sauce, rice vinegar, and sugar. Pour this mixture into the pan with the vegetables and stir well.
  5. Thicken the Sauce: Add the cornstarch mixture to the pan and let it simmer until the sauce slightly thickens.
  6. Combine Everything: Return the chicken to the pan and stir to coat it with the sauce. Season with salt, pepper, and chili flakes if desired.
  7. Serve: Serve hot with rice or noodles.
