Strawberry and Raspberry Crepes Recipe
Ingredients:
- For the Crepes:
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 teaspoon salt
- 2 tablespoons melted butter
- For the Filling:
- 1 cup fresh strawberries, sliced
- 1 cup fresh raspberries
- 2 tablespoons sugar (optional, to sweeten the berries)
- For Garnish:
- Whipped cream
- Powdered sugar
Instructions:
- Make the Crepe Batter:
- In a large mixing bowl, whisk together the flour and eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
- Cook the Crepes:
- Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
- Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
- Prepare the Filling:
- Combine the strawberries and raspberries in a bowl. Sprinkle sugar over the berries if you prefer them sweeter, and gently toss them.
- Assemble the Crepes:
- Place each crepe on a plate, fill with a generous amount of the berries, and fold or roll the crepe.
- Serve:
- Top each crepe with a dollop of whipped cream and a dusting of powdered sugar. Serve immediately.
