Ingredients:

  • For the Crepes:
    • 1 cup all-purpose flour
    • 2 eggs
    • 1/2 cup milk
    • 1/2 cup water
    • 1/4 teaspoon salt
    • 2 tablespoons melted butter
  • For the Filling:
    • 1 cup fresh strawberries, sliced
    • 1 cup fresh raspberries
    • 2 tablespoons sugar (optional, to sweeten the berries)
  • For Garnish:
    • Whipped cream
    • Powdered sugar

Instructions:

  1. Make the Crepe Batter:
    • In a large mixing bowl, whisk together the flour and eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  2. Cook the Crepes:
    • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
    • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
  3. Prepare the Filling:
    • Combine the strawberries and raspberries in a bowl. Sprinkle sugar over the berries if you prefer them sweeter, and gently toss them.
  4. Assemble the Crepes:
    • Place each crepe on a plate, fill with a generous amount of the berries, and fold or roll the crepe.
  5. Serve:
    • Top each crepe with a dollop of whipped cream and a dusting of powdered sugar. Serve immediately.
