Stuffed Potato Cakes

 

Ingredients:

  • 4 large potatoes, peeled and boiled
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cooked and diced meat (ham, bacon, or chicken)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped parsley
  • 1/4 cup diced carrots (optional)
  • Salt and pepper to taste
  • 1/4 cup flour
  • 1 egg, beaten
  • 2 tablespoons oil for frying

Instructions:

  1. Mash the boiled potatoes until smooth. Season with salt and pepper.
  2. In a bowl, mix the shredded cheese, cooked meat, green onions, parsley, and diced carrots.
  3. Take a handful of mashed potatoes and flatten it into a patty. Place a spoonful of the filling mixture in the center.
  4. Fold the edges of the potato patty over the filling, forming a ball, and then flatten it slightly to form a cake.
  5. Coat each potato cake in flour, dip in beaten egg, and then coat with flour again.
  6. Heat oil in a frying pan over medium heat. Fry the potato cakes until golden brown on both sides, about 3-4 minutes per side.
  7. Serve hot, garnished with additional chopped parsley or green onions.
