Stuffed Potato Cakes
Ingredients:
- 4 large potatoes, peeled and boiled
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup cooked and diced meat (ham, bacon, or chicken)
- 1/4 cup chopped green onions
- 1/4 cup chopped parsley
- 1/4 cup diced carrots (optional)
- Salt and pepper to taste
- 1/4 cup flour
- 1 egg, beaten
- 2 tablespoons oil for frying
Instructions:
- Mash the boiled potatoes until smooth. Season with salt and pepper.
- In a bowl, mix the shredded cheese, cooked meat, green onions, parsley, and diced carrots.
- Take a handful of mashed potatoes and flatten it into a patty. Place a spoonful of the filling mixture in the center.
- Fold the edges of the potato patty over the filling, forming a ball, and then flatten it slightly to form a cake.
- Coat each potato cake in flour, dip in beaten egg, and then coat with flour again.
- Heat oil in a frying pan over medium heat. Fry the potato cakes until golden brown on both sides, about 3-4 minutes per side.
- Serve hot, garnished with additional chopped parsley or green onions.
