Sugar-Coated Mini Doughnuts
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 tablespoons sugar
- 2 large eggs
- 1/2 cup milk
- 2 tablespoons butter (melted)
- 1 teaspoon vanilla extract
- Vegetable oil (for frying)
- 1/2 cup granulated sugar (for coating)
Instructions:
- Prepare the Dough:
- In a mixing bowl, whisk together the flour, baking powder, salt, and sugar.
- In another bowl, whisk the eggs, milk, melted butter, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients and mix until a soft dough forms. Do not overmix.
- Heat the Oil:
- Heat vegetable oil in a deep pot or frying pan to 350°F (175°C). Ensure the oil is deep enough for frying.
- Shape the Dough:
- Using a spoon or your hands, scoop small portions of dough (about the size of a ping pong ball) and gently roll them into balls.
- Fry the Dough Balls:
- Carefully drop the dough balls into the hot oil, a few at a time, ensuring not to overcrowd the pot.
- Fry for about 2-3 minutes, turning occasionally, until they are golden brown and cooked through.
- Coat with Sugar:
- Remove the fried dough balls with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- While still warm, roll them in granulated sugar until fully coated.
- Serve:
- Serve warm as a delightful snack or dessert.
