Sweet Potato Bites with Burrata, Beets, and Pesto
A delightful appetizer bursting with flavors! Roasted sweet potato rounds topped with creamy burrata, earthy beets, and fresh pesto make for a delicious and elegant bite-sized treat.
2 medium sweet potatoes, sliced into ½-inch rounds
2 tbsp olive oil
½ tsp salt
½ tsp black pepper

1 cup cooked beets, diced (roasted or boiled)
1 ball burrata cheese, torn into small pieces
¼ cup pesto sauce
1 tbsp balsamic glaze (optional)
1 tbsp chopped walnuts (optional for crunch)

Roast the Sweet Potatoes: Preheat oven to 400°F (200°C). Toss sweet potato slices with olive oil, salt, and black pepper. Arrange on a baking sheet and roast for 20-25 minutes, flipping halfway, until golden and tender.
