Sweet Potato Casserole with Pecan Streusel
Ingredients:
For the Sweet Potato Filling:
- 4 large sweet potatoes, peeled and cubed
- 1/2 cup granulated sugar
- 1/4 cup milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
For the Pecan Streusel Topping:
- 1/2 cup brown sugar
- 1/3 cup all-purpose flour
- 1/3 cup unsalted butter, melted
- 1 cup chopped pecans
Instructions:
- Prepare Sweet Potatoes:
- Preheat your oven to 350°F (175°C).
- Place the cubed sweet potatoes in a large pot of water and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain and mash the sweet potatoes until smooth.
