Ingredients:

For the Sweet Potato Filling:

  • 4 large sweet potatoes, peeled and cubed
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

For the Pecan Streusel Topping:

  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/3 cup unsalted butter, melted
  • 1 cup chopped pecans

Instructions:

  1. Prepare Sweet Potatoes:
    • Preheat your oven to 350°F (175°C).
    • Place the cubed sweet potatoes in a large pot of water and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain and mash the sweet potatoes until smooth.
  2. Make Sweet Potato Filling:
    • In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, milk, eggs, melted butter, vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt. Mix until well combined.

  3. Prepare Pecan Streusel Topping:
    • In a medium bowl, combine the brown sugar, all-purpose flour, melted butter, and chopped pecans. Mix until the mixture is crumbly.
    • Sprinkle the pecan streusel topping evenly over the sweet potato filling.
  4. Bake the Casserole:
    • Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the sweet potato filling is set.
