Turkish Pide Bread Recipe
Ingredients:
For the Dough:
- 4 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon sugar
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1 1/2 cups warm water (110°F / 45°C)
- 1/4 cup olive oil
For the Topping:
- 1 egg yolk, beaten
- 1 tablespoon yogurt
- 1 tablespoon olive oil
- Sesame seeds and nigella seeds (optional)
Instructions:
- Prepare the Dough:
- In a small bowl, dissolve the sugar and yeast in the warm water. Let it sit for about 5-10 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Mix until a dough forms. Turn the dough out onto a lightly floured surface and knead for about 10 minutes until smooth and elastic. Alternatively, you can use a stand mixer with a dough hook attachment.
- First Rise:
- Place the dough in a lightly greased bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 to 1 1/2 hours, or until it has doubled in size.
- Shape the Pide:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Punch down the dough to release any air bubbles and divide it into 4 equal pieces.
- Shape each piece into a ball and then flatten each ball into a round or oval shape, about 1/2 inch thick. Place the shaped dough onto the prepared baking sheet.
- Second Rise:
- Cover the shaped dough with a damp cloth and let it rise for another 15-20 minutes.
- Prepare the Topping:
- In a small bowl, mix together the beaten egg yolk, yogurt, and olive oil.
- Add the Topping:
- Using your fingers, gently press indentations all over the surface of the dough. Brush the top of each pide with the egg yolk mixture.
- Sprinkle with sesame seeds and nigella seeds if desired.
- Bake:
- Bake in the preheated oven for 15-20 minutes, or until the breads are golden brown and sound hollow when tapped on the bottom.
- Cool and Serve:
- Allow the pide to cool slightly on a wire rack before serving.
