Ingredients:

  • 1/2 cup shredded cheese (cheddar, mozzarella, or parmesan work great)

  • 1 teaspoon dried thyme (or fresh if preferred)

  • 1 teaspoon dried parsley or rosemary

  • Salt and black pepper, to taste

  • Olive oil (for brushing)

  • Optional: grated parmesan and fresh herbs for garnish

Instructions:

  1. Preheat and Prep: Preheat oven to 400°F (200°C). Scrub the potatoes clean and dry them. Place them directly on the oven rack or on a baking sheet and bake for about 45–50 minutes until fork-tender.

  2. Slice and Scoop: Let potatoes cool slightly. Slice each potato in half lengthwise and gently scoop out most of the flesh into a bowl, leaving a thin layer inside the skins to help them hold their shape.

  3. Make the Filling: Add butter, sour cream, warmed milk, minced garlic, thyme, parsley, salt, and pepper to the bowl with the potato flesh. Mash until smooth and creamy. Stir in shredded cheese.

  4. Pipe or Spoon Back In: Spoon or pipe the mashed potato mixture back into the hollowed-out potato skins. For a beautiful finish, use a piping bag with a star tip.

  5. Second Bake: Arrange filled potatoes on a baking sheet. Lightly brush tops with olive oil or melted butter. Bake at 400°F for another 15–20 minutes until tops are golden and slightly crispy.

  6. Serve and Enjoy: Remove from oven and garnish with fresh herbs or a sprinkle of parmesan if desired. Serve hot and watch them disappear!

Final Notes:

These Twice-Baked Herb Potatoes are versatile—feel free to mix in crispy bacon bits, caramelized onions, or chopped chives. Whether served alongside a roast, grilled chicken, or as a vegetarian main with salad, they elevate any meal with minimal effort. Comforting, flavorful, and totally irresistible!
