Vanilla Sponge Cake
Ingredients:
- 1 1/2 cups (190g) all-purpose flour
- 1 cup (200g) granulated sugar
- 3 large eggs, at room temperature
- 1/2 cup (120ml) vegetable oil or melted butter
- 1/2 cup (120ml) milk, at room temperature
- 1 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- A pinch of salt
- Powdered sugar for dusting (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (180°C).
- Grease and line an 8×8 inch (20×20 cm) baking pan with parchment paper.
- Mix Dry Ingredients:
- In a bowl, sift together the flour, baking powder, and salt.
- Beat the Eggs and Sugar:
- In a separate large bowl, beat the eggs and sugar using an electric mixer for 4-5 minutes until light, fluffy, and pale.
- Incorporate Wet Ingredients:
- Slowly add the vanilla extract, milk, and oil (or melted butter) to the egg mixture. Mix until combined.
- Combine Wet and Dry Ingredients:
- Gradually fold the dry ingredients into the wet mixture using a spatula. Be gentle to maintain the airiness of the batter.
- Bake the Cake:
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Dust with powdered sugar for an elegant finish.
