Ingredients:

  • 1 1/2 cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 3 large eggs, at room temperature
  • 1/2 cup (120ml) vegetable oil or melted butter
  • 1/2 cup (120ml) milk, at room temperature
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (180°C).
    • Grease and line an 8×8 inch (20×20 cm) baking pan with parchment paper.
  2. Mix Dry Ingredients:
    • In a bowl, sift together the flour, baking powder, and salt.
  3. Beat the Eggs and Sugar:
    • In a separate large bowl, beat the eggs and sugar using an electric mixer for 4-5 minutes until light, fluffy, and pale.
  4. Incorporate Wet Ingredients:
    • Slowly add the vanilla extract, milk, and oil (or melted butter) to the egg mixture. Mix until combined.
  5. Combine Wet and Dry Ingredients:
    • Gradually fold the dry ingredients into the wet mixture using a spatula. Be gentle to maintain the airiness of the batter.
  6. Bake the Cake:
    • Pour the batter into the prepared pan and smooth the top.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and Serve:
    • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
    • Dust with powdered sugar for an elegant finish.
