Zucchini Fritters
Ingredients:
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded cheddar cheese
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- Vegetable oil for frying
For the Dipping Sauce:
- 1 cup sour cream
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh chives
- Salt and pepper to taste
Instructions:
- Prepare the Zucchini:
- Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove as much liquid as possible.
- Prepare the Fritter Mixture:
- In a large bowl, combine the grated and drained zucchini, Parmesan cheese, cheddar cheese, eggs, flour, baking powder, green onions, garlic, black pepper, and paprika. Mix until well combined.
- Fry the Fritters:
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Scoop 2-3 tablespoons of the zucchini mixture and drop it into the hot oil, flattening it slightly with a spatula.
- Fry for 2-3 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and drain on a paper towel-lined plate. Repeat with the remaining mixture.
- Prepare the Dipping Sauce:
- In a small bowl, combine the sour cream, lemon juice, chopped chives, salt, and pepper. Mix until well combined.
- Serve:
- Serve the warm zucchini fritters with the dipping sauce on the side.
