Garlic Butter Seared Scallops
Ingredients:
- 12 large sea scallops
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 3 garlic cloves, minced
- Juice of 1 lemon
- 1/4 cup chicken or seafood stock (optional)
- Salt and pepper to taste
- 1 tbsp chopped parsley (for garnish)
Instructions:
- Prepare the Scallops:
- Pat the scallops dry with a paper towel (this ensures a nice sear).
- Season both sides with salt and pepper.
- Sear the Scallops:
- Heat olive oil in a large skillet over medium-high heat.

- Squeeze in lemon juice and stir.
- Combine:
- Return the scallops to the pan and spoon the garlic butter sauce over them.
- Cook for 1–2 minutes to heat through, ensuring not to overcook the scallops.
- Serve:
- Garnish with chopped parsley and serve immediately.
- Pair with a side of rice, pasta, or steamed vegetables.
