Introduction:

Ingredients:

Instructions:

Choux Pastry:

  1. Preheat the oven to 425°F (220°C).
  2. In a medium saucepan, combine water, butter, salt, and sugar and bring to a boil.
  3. Add flour all at once, reduce heat to medium, and stir vigorously until the mixture forms a ball. Remove from heat and let cool for 5 minutes.
  4. Beat in eggs one at a time, ensuring each is fully incorporated before adding the next. The dough should be smooth and shiny.
  5. Transfer the dough to a piping bag fitted with a large round tip and pipe onto a baking sheet in small rounds, about 2 inches apart.
  6. Bake for 20-25 minutes until golden and puffed. Then, turn off the oven and let them sit inside for 10 minutes to dry out. Remove and let cool completely on a wire rack.

Cream Filling:

  1. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Caramel Glaze:

  1. For the caramel, combine sugar and water in a saucepan over medium heat, stirring until sugar is dissolved.
  2. Increase heat and cook without stirring until the mixture turns a deep amber color, about 7-10 minutes.
  3. Remove from heat and carefully pour in the cream (mixture will bubble violently).
  4. Add butter and salt, stir until smooth.
  5. Let the caramel cool slightly before drizzling over the filled cream puffs.
