BAKED CHICKEN, MUSHROOMS AND ZUCCHINI

Ingredients:

500g/17.6oz boneless chicken thighs, cut into small pieces
300g/10.5oz sliced ​​mushrooms
1 large zucchini, sliced ​​and halved
2 Spring onions, sliced ​​ 1 170 g (3/4 cup) jar sour cream
1 cup milk 2 large eggs
1 garlic clove, crushed
1/2 teaspoon dried thyme
Chicken seasoning
100 g/3.5 oz grated mozzarella -Cheese
2 tablespoons all-purpose flour
Salt and pepper
Preparation:
Egg mixture –

In a bowl, whisk the eggs, then add sour cream, milk and thyme and season with salt and pepper. Stir, then add the flour and stir until well combined.Chicken and Baking
Season chicken with chicken seasoning, salt and pepper.
Heat 2 tablespoons of butter in a large pan and brown the chicken on both sides. Remove from pan and set aside.

In the same pan, add the mushrooms and zucchini and cook until the zucchini is slightly tender. Remove from the pan, drain the vegetables well and place in a 23 x 33 cm baking dish (place some mushrooms and zucchini on top).Drain the juice from the chicken and place it on top of the mushrooms and zucchini on the plate. Scatter the chopped garlic and sliced ​​spring onions over the top and top again with the remaining reserved mushrooms and zucchini.
Pour over the egg mixture. Top with grated mozzarella, extra dried thyme and ground pepper.
Bake in the oven at 190°C for about 45 minutes or until the cheese is melted and golden brown on top.Enjoy!
