Classic French Onion Soup

Rich, savory, and topped with golden melted cheese, this French Onion Soup is the ultimate comfort food. Slow-caramelized onions and a flavorful beef broth come together for a restaurant-quality dish that’s surprisingly easy to make at home.
Ingredients
4 large yellow onions, thinly sliced
3 tablespoons unsalted butter
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon sugar (optional, for caramelizing)
2 tablespoons all-purpose flour
1/2 cup dry white wine (optional)
6 cups beef broth
1 teaspoon Worcestershire sauce
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
1 bay leaf
Salt and black pepper, to taste
For the Topping
1 French baguette, sliced
2 cups shredded Gruyère cheese
1/2 cup grated Parmesan cheese
Preparation Steps
Heat the butter and olive oil in a large pot over medium heat. Add the onions and cook, stirring often, for 35–45 minutes until deeply golden and caramelized.
Stir in the garlic and cook for 1 minute. Sprinkle in the flour and cook for another minute.
Add the white wine, if using, and scrape up any browned bits from the bottom of the pot.
Pour in the beef broth, Worcestershire sauce, thyme, and bay leaf. Bring to a gentle boil, then reduce the heat and simmer for 20–25 minutes. Remove the bay leaf and season with salt and pepper.
Toast the baguette slices until crisp.
Ladle the soup into oven-safe bowls. Place toasted bread on top, then generously cover with Gruyère and Parmesan.
Broil for 2–4 minutes, or until the cheese is melted, bubbly, and lightly browned.
Serving Tip
Serve immediately while the cheese is hot and stretchy, with an extra slice of crusty bread for dipping.
