Southern Okra and Tomatoes

Ingredients
1½ lbs fresh okra, sliced into ½-inch pieces
2 tbsp bacon grease or olive oil
1 small onion, diced
2 cloves garlic, minced
1 (14.5 oz) can diced tomatoes, undrained
2 tbsp tomato paste (optional, for a richer flavor)
1 tsp sugar (optional)
1 tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp dried thyme
½ tsp salt, or to taste
¼ tsp black pepper
¼ tsp cayenne pepper (optional)
2 tbsp chopped fresh parsley
Instructions
Heat the bacon grease or olive oil in a large skillet over medium heat.
Add the onion and cook for 4–5 minutes until softened. Stir in the garlic and cook for 30 seconds.
Add the sliced okra and sauté for 8–10 minutes, stirring occasionally, until the okra begins to lose most of its stickiness.
Stir in the diced tomatoes, tomato paste (if using), sugar, smoked paprika, garlic powder, onion powder, thyme, salt, black pepper, and cayenne.
Reduce the heat to low and simmer for 15–20 minutes, stirring occasionally, until the tomatoes have thickened and the okra is tender.
Taste and adjust the seasoning as needed.
Sprinkle with fresh parsley before serving.
