Cherry Delight Dessert

Cherry Delight is a classic layered dessert that combines a buttery graham cracker crust, a smooth and creamy cheesecake-style filling, and a bright cherry topping. The contrast between the crunchy crust, fluffy cream layer, and sweet-tart cherries makes every bite incredibly satisfying. It’s an especially convenient dessert for family gatherings, holidays, potlucks, or whenever you need something impressive that can be prepared ahead of time.

Ingredients

For the Graham Cracker Crust

2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar

For the Creamy Filling

16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups heavy whipping cream, cold
2 tablespoons granulated sugar

For the Cherry Topping

2 cans (21 oz each) cherry pie filling
1 tablespoon fresh lemon juice, optional
1/2 teaspoon vanilla extract, optional

Preparation

1. Prepare the Crust

Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until all the crumbs are evenly moistened.

Press the mixture firmly and evenly into the bottom of the prepared baking dish. Bake for about 8–10 minutes, then remove from the oven and allow the crust to cool completely.

For a completely no-bake version, simply refrigerate the crust for about 30 minutes instead of baking it.

2. Make the Cream Cheese Filling

Place the softened cream cheese in a large mixing bowl and beat until smooth and creamy.

Add the powdered sugar and vanilla extract. Continue beating until the mixture is completely smooth with no lumps remaining.

In a separate chilled bowl, beat the heavy whipping cream with 2 tablespoons of granulated sugar until stiff peaks form.

Gently fold the whipped cream into the cream cheese mixture. Continue folding just until everything is evenly combined and fluffy.

3. Assemble the Dessert

Spread the cream cheese filling evenly over the cooled graham cracker crust. Use a spatula to smooth the surface without pressing too firmly.

Refrigerate for approximately 30 minutes so the creamy layer can begin to firm up.

4. Prepare the Cherry Topping

Place the cherry pie filling in a bowl. If desired, stir in the lemon juice and vanilla extract. The lemon adds a little brightness that balances the sweetness of the cherries.

Carefully spoon the cherry mixture over the chilled cream cheese layer. Spread it evenly from edge to edge, making sure plenty of whole cherries are visible on top.

5. Chill Until Firm

Cover the dessert and refrigerate for at least 4 hours. For the best texture and easiest slicing, refrigerate it overnight.

The chilling time allows the creamy filling to become firm while helping the flavors blend beautifully.

6. Slice and Serve

When ready to serve, remove the Cherry Delight from the refrigerator and cut it into squares using a sharp knife. Wipe the knife between cuts for cleaner slices.

Serve the dessert chilled, adding a little extra cherry topping to each piece if desired.
