Lemon Garlic Chicken Bites

Ingredients:
1 pound boneless, skinless chicken breasts (cut into 1-inch pieces and patted dry)
½ teaspoon dried oregano
½ teaspoon dried basil
2 tablespoons chopped fresh parsley
½ teaspoon kosher salt
¼ teaspoon black pepper
4 teaspoons salt oil, divided
2 teaspoons minced garlic
Juice of ½ medium lemon (about 2 teaspoons)

Preparation:
Place the chicken in a small bowl and stir in the thyme, basil, oil, salt and pepper. . Sprinkle this mixture evenly over the chicken and mix well.
Cook the chicken: Heat a 12-inch skillet over medium heat and add 2 tablespoons oil. Once melted, add the chicken pieces in a single layer and make sure they are cooked through. Avoid overdose; cook in batches if necessary. Cook, turning the chicken halfway through, until golden brown on all sides and the chicken is cooked through, 8-10 minutes.
Add garlic and a little more oil: Add the remaining 2 tablespoons of oil to the pan. Once the butter has melted, add the minced garlic and cook for another minute or until fragrant, making sure the internal temperature of the chicken reaches 165°F.
Finish with lemon: Squeeze lemon juice over cooked chicken and stir to combine all the flavors.
Recipe: Make instant lemon garlic chicken soup. It is delicious on its own, but can also be combined with rice, vegetables or salad.
