Traditional English Breakfast with Pancakes

Ingredients:

For the Pancakes:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Maple syrup, for serving

For the Breakfast:

  • 4-6 pork sausages
  • 4-6 slices of bacon
  • 4 large eggs
  • 2 tablespoons vegetable oil or butter, for frying
  • 2 medium potatoes, diced
  • Salt and pepper, to taste
  • 2 hard-boiled eggs, sliced
  • Butter, for serving

Instructions:

1. Prepare the Pancake Batter:

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together the buttermilk, milk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Some lumps are okay. Let the batter rest for about 10 minutes.

2. Cook the Sausages and Bacon:

  • In a large skillet over medium heat, cook the sausages until browned and cooked through, about 8-10 minutes, turning occasionally.
  • In another skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels.

3. Cook the Potatoes:

  • In the same skillet used for the bacon, add the diced potatoes and cook over medium heat, stirring occasionally, until golden brown and crispy, about 10-15 minutes. Season with salt and pepper to taste.

4. Cook the Pancakes:

  • Heat a non-stick griddle or large skillet over medium heat and lightly grease with butter or cooking spray.
  • Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until golden brown on the other side, about 1-2 minutes more. Keep warm in a low oven if necessary.

5. Fry the Eggs:

  • In a clean skillet, heat the vegetable oil or butter over medium heat.
  • Crack the eggs into the skillet and cook to your desired doneness. Season with salt and pepper.

6. Assemble the Breakfast:

  • On each plate, arrange a serving of pancakes with a drizzle of maple syrup.
  • Add the cooked sausages, bacon, and fried eggs.
  • Serve the diced potatoes alongside.
  • Garnish with slices of hard-boiled eggs.

7. Serve:

  • Serve the traditional English breakfast with pancakes hot, with additional butter and maple syrup if desired.
