Cheesy Chicken and Rice Casserole

Ingredients:

For the Filling:

  • 2 cups cooked shredded chicken
  • 2 cups cooked white rice
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup frozen mixed vegetables (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

For the Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup cold unsalted butter, cut into small cubes
  • 1/4 to 1/2 cup ice-cold water

For Topping:

  • 2 tablespoons melted butter
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme)

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour and salt.
    • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Gradually add the ice-cold water, a tablespoon at a time, mixing just until the dough comes together.
    • Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling:
    • Preheat your oven to 375°F (190°C).
    • In a large mixing bowl, combine the shredded chicken, cooked rice, mozzarella cheese, cheddar cheese, sour cream, cream of chicken soup, cream of mushroom soup, and frozen mixed vegetables (if using).
    • Add the garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are evenly combined.
  3. Assemble the Casserole:
    • Spread the chicken and rice mixture evenly into a greased 9×13 inch baking dish.
    • Roll out the chilled dough on a lightly floured surface to fit the top of the baking dish.
    • Place the dough over the filling, pressing the edges to seal. Trim any excess dough.
    • Brush the top of the crust with melted butter and sprinkle with dried Italian herbs.
  4. Bake:
    • Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
    • Let the casserole cool for a few minutes before serving.
  5. Serve:
    • Cut into squares and serve warm. Enjoy the cheesy, creamy, and flavorful casserole with a side salad or steamed vegetables.
