Savory Vegetable Patties

 

Ingredients:

  • 3 large potatoes, peeled and boiled
  • 1 carrot, grated
  • 1/2 cup green peas, cooked
  • 1/2 cup corn kernels
  • 1/2 bell pepper, finely chopped
  • 1 small onion, finely chopped
  • 2-3 green chilies, finely chopped (optional)
  • 1/4 cup fresh coriander leaves, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons all-purpose flour
  • 1-2 tablespoons water (if needed)
  • Oil, for shallow frying

Instructions:

  1. Prepare the Potatoes:
    • Mash the boiled potatoes in a large mixing bowl until smooth.
  2. Prepare the Vegetable Mixture:
    • Add the grated carrot, cooked green peas, corn kernels, chopped bell pepper, chopped onion, green chilies (if using), and chopped coriander leaves to the mashed potatoes.
    • Add the ginger-garlic paste, turmeric powder, garam masala, cumin powder, coriander powder, salt, and pepper. Mix everything well until all the ingredients are evenly distributed.
  3. Form the Patties:
    • Add the breadcrumbs to the mixture to help bind the ingredients together. Mix well.
    • If the mixture is too dry, add a little water to help it come together. If it’s too wet, add more breadcrumbs.
    • Take a small portion of the mixture and shape it into a patty. Repeat with the remaining mixture.
  4. Coat the Patties:
    • In a small bowl, mix the all-purpose flour with a little water to make a thick paste.
    • Lightly coat each patty with the flour paste.
  5. Fry the Patties:
    • Heat oil in a large skillet over medium heat. Once hot, add the patties in batches and shallow fry them until golden brown and crispy on both sides, about 3-4 minutes per side.
    • Remove the patties from the skillet and drain on paper towels to remove any excess oil.
  6. Serve:
    • Serve the savory vegetable patties hot with your favorite dipping sauce or chutney.

Tips:

  • You can customize these patties by adding other vegetables like spinach, beetroot, or zucchini.
  • These patties can be served as a snack, side dish, or even as a filling for sandwiches or wraps.
