Ingredients:

  • 2 cups broccoli florets, cooked and chopped
  • 1 cup shredded cheddar cheese (or your preferred cheese)
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (you can use panko for extra crispiness)
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. Cook the broccoli: Steam or boil the broccoli florets for about 5 minutes, until tender. Drain and chop the broccoli into small pieces.
  2. Mix the ingredients: In a large bowl, combine the chopped broccoli, shredded cheddar cheese, Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Mix until all the ingredients are well incorporated.
  3. Shape the fritters: Scoop a small amount of the mixture and form into patties or fritters, about 2-3 inches in diameter.
  4. Fry the fritters: Heat a thin layer of olive oil in a large skillet over medium heat. Fry the fritters in batches for 3-4 minutes on each side, or until golden brown and crispy.
  5. Drain and serve: Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil. Serve warm with a dipping sauce like ranch, sour cream, or a yogurt-based dip.
