No-Bake Cherry Cheesecake Recipe

 

Ingredients:

  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/3 cup sugar
    • 6 tablespoons unsalted butter, melted
  • For the Filling:
    • 1 (8 ounce) package cream cheese, softened
    • 1 (14 ounce) can sweetened condensed milk
    • 1/3 cup lemon juice
    • 1 teaspoon vanilla extract
  • For the Topping:
    • 1 can (21 ounces) cherry pie filling

Equipment:

  • 9-inch pie dish or springform pan
  • Mixing bowl
  • Electric mixer

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish or springform pan. Set aside in the refrigerator to chill.
  2. Make the Filling:
    • In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.
    • Gradually beat in the sweetened condensed milk until smooth.
    • Add lemon juice and vanilla extract, mixing until well combined.
    • Pour the cream cheese mixture over the crust, smoothing out the top with a spatula.
  3. Chill:
    • Refrigerate the cheesecake for at least 3 hours, or until set.
  4. Add the Cherry Topping:
    • Once the cheesecake is set, top with the cherry pie filling just before serving.
  5. Serve:
    • Cut into slices and serve chilled.
