  1. Prepare the Syrup: In a saucepan, combine water, sugar, honey, cinnamon stick, and lemon peel. Bring to a boil, then reduce to a simmer for about 10 minutes until slightly thickened. Set aside to cool completely.
  2. Make the Custard: In another saucepan, heat the milk until just hot but not boiling. In a bowl, whisk together the semolina, sugar, and salt. Gradually add this to the hot milk, stirring continuously. Reduce the heat and cook until the mixture thickens. Remove from heat and let cool slightly before beating in the eggs and vanilla.
  3. Assemble the Pie: Preheat your oven to 350°F (175°C). Brush a baking dish with melted butter. Lay down 6 phyllo sheets, brushing each with melted butter before adding the next. Pour the custard over the phyllo base. Cover with the remaining 6 sheets of phyllo, again brushing each with butter.
  4. Bake: Bake for 45 minutes or until the phyllo is golden and crisp.
  5. Add Syrup: Once the pie is baked, immediately pour the cooled syrup over the hot pie, allowing it to soak through the layers.
  6. Cool and Serve: Let the pie cool to set the custard completely, then cut into squares and serve.
