Ingredients:

  • 6 large eggs, hard-boiled and peeled
  • 1 ripe avocado, peeled and pitted
  • 1/4 cup mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped chives
  • Salt and pepper to taste
  • Paprika for garnish (optional)
  • Fresh spinach leaves (optional)
  • Sliced bread or croissants for serving

Instructions:

  1. Prepare the eggs:
    • Chop the hard-boiled eggs into small pieces.
  2. Make the salad:
    • In a medium bowl, mash the avocado.
    • Add the chopped eggs, mayonnaise, mustard, and lemon juice. Mix until well combined but still chunky.
    • Stir in the chives, and season with salt and pepper to taste.
  3. Assemble the sandwich:
    • If using, place a layer of fresh spinach leaves on a slice of bread.

  4. Serve:
