Bacon-Wrapped Meatloaf with Roasted Potatoes

 

 

 

Ingredients:

For the Meatloaf:
  • 1 pound (500g) ground beef or a mix of beef and pork
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 egg
  • 1 small onion, finely diced
  • 1 small carrot, finely diced or grated
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6–8 slices of bacon
For the Roasted Potatoes:
  • 4 medium potatoes, cut into wedges
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Meatloaf:
    • In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan, milk, egg, onion, carrot, garlic, Worcestershire sauce, herbs, salt, and pepper.
    • Mix until well combined but avoid overmixing.
    • Shape the mixture into a loaf and place it on a parchment-lined baking tray or loaf pan.
  3. Wrap with Bacon:
    • Lay bacon slices over the top of the meatloaf, tucking the edges underneath to fully wrap the loaf.
  4. Bake the Meatloaf:
    • Bake for 45–60 minutes, or until the internal temperature reaches 160°F (70°C).
    • If desired, broil for an additional 2–3 minutes to crisp up the bacon.
  5. Prepare the Roasted Potatoes:
    • While the meatloaf is baking, toss potato wedges and mushrooms with olive oil, garlic powder, paprika, salt, and pepper.
    • Spread them out on a baking sheet.
    • Roast in the oven alongside the meatloaf for 25–30 minutes, flipping halfway through, until golden and tender.
  6. Serve:
    • Slice the meatloaf and serve with roasted potatoes and mushrooms.
    • Garnish with fresh parsley or chives.
