Black Chocolate Cake Recipe

 

Ingredients:

For the Cake:

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder (preferably black cocoa powder)
  • 1 1/2 cups granulated sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs, at room temperature
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Chocolate Ganache:

  • 1 cup heavy cream
  • 8 oz semisweet or bittersweet chocolate, finely chopped
  • 2 tbsp unsalted butter, softened

For the Blackberry Garnish:

  • Fresh blackberries
  • Optional: edible glitter or gold leaf for decoration

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. Make the Cake Batter:
    • In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
    • Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until well combined.
    • Reduce the speed to low and carefully add the boiling water to the batter. Mix until fully combined. The batter will be thin.
  3. Bake the Cakes:
    • Divide the batter evenly among the prepared cake pans.
    • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  4. Prepare the Chocolate Ganache:
    • In a medium saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.
    • Remove from heat and add the chopped chocolate. Let it sit for 2-3 minutes, then stir until smooth and glossy.
    • Stir in the softened butter until fully incorporated. Allow the ganache to cool to room temperature before using.
  5. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread a layer of chocolate ganache over the top.
    • Repeat with the second and third cake layers, spreading ganache between each layer.
    • Use the remaining ganache to frost the top and sides of the cake.
  6. Garnish:
    • Arrange fresh blackberries on top of the cake. For an extra touch of elegance, you can add edible glitter or gold leaf.
  7. Serve:
    • Allow the cake to set for at least 30 minutes before slicing. Serve and enjoy the rich, chocolatey goodness!
