Ingredients:

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 12 ounces rotini pasta
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Optional: red pepper flakes for a bit of heat

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Drain and set aside.
  2. Cook the Beef:
    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
    • Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  3. Add the Sauce:
    • Stir in the tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. If you like a bit of spice, add red pepper flakes to taste.
    • Let the sauce simmer for about 10 minutes to allow the flavors to meld.
  4. Combine Pasta and Sauce:
    • Add the cooked pasta to the skillet with the beef and sauce. Stir until the pasta is well coated with the sauce.
  5. Add the Cheese:
    • Preheat your oven to 350°F (175°C).
    • Transfer the pasta mixture to a large baking dish. Sprinkle the shredded cheddar and mozzarella cheeses evenly over the top.
  6. Bake:
    • Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Remove from the oven and let it cool for a few minutes before serving.
