Cheesy Mini Meatloaves Recipe
Ingredients:
- 1 1/2 lbs ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 2 cloves garlic, minced
- 1 large egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a muffin tin with non-stick cooking spray or line with silicone muffin liners.
- Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, chopped bell pepper, minced garlic, egg, Worcestershire sauce, dried oregano, dried basil, salt, and black pepper. Mix until well combined.
- Shape the Mini Meatloaves: Divide the meat mixture evenly among the muffin cups, pressing down lightly to fill each cup. Make a small indentation in the center of each meatloaf.
- Add the Topping: In a small bowl, mix together the ketchup, brown sugar, and yellow mustard. Spoon a small amount of the ketchup mixture over each mini meatloaf. Top each meatloaf with shredded cheddar cheese.
- Bake the Meatloaves: Bake in the preheated oven for 20-25 minutes, or until the meatloaves are cooked through and the cheese is melted and bubbly.
- Garnish and Serve: Let the mini meatloaves cool slightly in the muffin tin before removing. Garnish with chopped fresh parsley and serve.
