Cheesy Spinach Mini Tartlets

Ingredients:

  • Tartlet Shells:
    • 1 package of pre-made mini tart shells (or make your own using a mini muffin pan and pie dough)
  • Filling:
    • 1 cup spinach, washed and finely chopped
    • 1/2 cup ricotta cheese
    • 1/4 cup grated Parmesan cheese
    • 1 egg
    • 1 garlic clove, minced
    • Salt and pepper, to taste
    • Nutmeg, a pinch (optional)
  • Topping:
    • Extra grated Parmesan cheese for sprinkling

Instructions:

  1. Preheat Oven and Prepare Tartlet Shells:
    • Preheat your oven to 375°F (190°C).
    • Place the mini tart shells on a baking tray. If using homemade pie dough, press small circles of dough into the cavities of a mini muffin tin to form the shells.
  2. Prepare the Filling:
    • In a mixing bowl, combine the spinach, ricotta cheese, Parmesan cheese, egg, minced garlic, salt, pepper, and a pinch of nutmeg if desired. Mix well until all components are evenly incorporated.
  3. Assemble Tartlets:
    • Spoon the filling into each tart shell, filling them just to the brim.
    • Sprinkle a little extra Parmesan cheese on top of each filled tartlet for added flavor and a golden finish.
  4. Bake:
    • Bake in the preheated oven for about 15-20 minutes, or until the filling is set and the tops are lightly golden.
  5. Serve:
    • Allow the tartlets to cool slightly before serving. They can be enjoyed warm or at room temperature.

These mini tartlets are perfect for parties, as a light appetizer, or even packed for a snack. The combination of creamy cheese and spinach encased in a crispy shell makes for a delightful bite-sized treat!
