Cheesy Spinach Mini Tartlets
Ingredients:
- Tartlet Shells:
- 1 package of pre-made mini tart shells (or make your own using a mini muffin pan and pie dough)
- Filling:
- 1 cup spinach, washed and finely chopped
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 garlic clove, minced
- Salt and pepper, to taste
- Nutmeg, a pinch (optional)
- Topping:
- Extra grated Parmesan cheese for sprinkling
Instructions:
- Preheat Oven and Prepare Tartlet Shells:
- Preheat your oven to 375°F (190°C).
- Place the mini tart shells on a baking tray. If using homemade pie dough, press small circles of dough into the cavities of a mini muffin tin to form the shells.
- Prepare the Filling:
- In a mixing bowl, combine the spinach, ricotta cheese, Parmesan cheese, egg, minced garlic, salt, pepper, and a pinch of nutmeg if desired. Mix well until all components are evenly incorporated.
- Assemble Tartlets:
- Spoon the filling into each tart shell, filling them just to the brim.
- Sprinkle a little extra Parmesan cheese on top of each filled tartlet for added flavor and a golden finish.
- Bake:
- Bake in the preheated oven for about 15-20 minutes, or until the filling is set and the tops are lightly golden.
- Serve:
- Allow the tartlets to cool slightly before serving. They can be enjoyed warm or at room temperature.
