Ingredients:

  • For the Banana Cake:
    • 1/2 cup (115g) unsalted butter, softened
    • 1 cup (200g) granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 and 1/2 cups (180g) all-purpose flour
    • 1 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup (120ml) sour cream or plain yogurt
    • 3 ripe bananas, mashed
    • 1 cup (175g) chocolate chips
  • For the Cream Cheese Glaze:
    • 4 ounces (115g) cream cheese, softened
    • 1/4 cup (60g) unsalted butter, softened
    • 1 cup (120g) powdered sugar
    • 1/2 teaspoon vanilla extract
    • 1-2 tablespoons milk (adjust for desired consistency)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. Make the Banana Cake:
    • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
    • In another bowl, whisk together the flour, baking soda, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Stir in the sour cream and mashed bananas until well incorporated.
    • Fold in the chocolate chips.
    • Pour the batter into the prepared baking pan and spread evenly.
  3. Bake the Cake:
    • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
    • Remove the cake from the oven and let it cool in the pan on a wire rack.
  4. Make the Cream Cheese Glaze:
    • In a medium bowl, beat the softened cream cheese and butter together until smooth.
    • Gradually add the powdered sugar and vanilla extract, mixing until combined.
    • Add milk, one tablespoon at a time, until you reach your desired glaze consistency.
  5. Glaze the Cake:
    • Once the cake has cooled, spread the cream cheese glaze evenly over the top.
    • Allow the glaze to set slightly before slicing and serving.
