Chocolate Coconut Layer Bars
Ingredients:
For the Chocolate Base:
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
For the Coconut Layer:
- 2 cups shredded sweetened coconut
- 1 can (14 oz) sweetened condensed milk
- 1 teaspoon vanilla extract
For the Chocolate Topping:
- 1 1/2 cups semi-sweet chocolate chips
- 2 tablespoons unsalted butter
- 1/2 cup toasted coconut flakes (optional, for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Line a 9×9-inch baking pan with parchment paper or foil, leaving an overhang for easy removal, and lightly grease it.
- Make the Chocolate Base:
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another large bowl, whisk together the melted butter and sugar until well combined.
- Add the eggs and vanilla extract to the butter mixture and whisk until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Spread the chocolate batter evenly in the prepared baking pan.
- Bake the Chocolate Base:
- Bake the base in the preheated oven for about 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the base to cool slightly while preparing the coconut layer.
- Prepare the Coconut Layer:
- In a bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.
- Spread the coconut mixture evenly over the cooled chocolate base.
- Bake the Coconut Layer:
- Return the pan to the oven and bake for an additional 15-20 minutes, or until the coconut layer is lightly golden and set.
- Remove from the oven and let it cool completely.
- Prepare the Chocolate Topping:
- In a microwave-safe bowl, combine the chocolate chips and butter.
- Microwave in 20-second intervals, stirring between each, until the chocolate is fully melted and smooth.
- Pour the melted chocolate over the cooled coconut layer, spreading it evenly.
- Sprinkle toasted coconut flakes on top if desired.
- Chill and Serve:
- Place the bars in the refrigerator for at least 1 hour to allow the chocolate topping to set.
- Once set, use the parchment paper overhang to lift the bars out of the pan and cut them into squares.
